A Monolithic (Single) Docker Container for Immich already exists : https://github.com/imagegenius/docker-immich/

Having this as part of LinuxServer.io would be very nice.. it would let me install it on my LibreELEC-running RaspberryPi.

We have no plans to add this at this moment in time. Also, we haven't been adding containers to the libreelec repo for a long time, you're best to look into how to deploy containers with docker compose on that platform.
