Add screenpipe values to organization profile

The organization's GitHub profile (profile/README.md) was essentially empty. This PR populates it with screenpipe's core values and engineering principles, sourced directly from VISION.md and CONTRIBUTING.md in the main repo.

• profile/README.md (new): Organization profile page shown at github.com/screenpipe, containing:
  • Brief org intro with links (site, docs, Discord, X)
  • Values: local-first, open source by default, user fanatic, positive sum, radical transparency, bold/ship culture, humans augmented by AI
  • Principles: simplicity, stability over features, no feature creep, cross-platform, respect the user's machine

All content is derived verbatim or paraphrased from existing screenpipe source documents — no new values invented.
